Salmon in cast iron

All of the filets fit in the cast iron skillet just perfectly!

So, you want easy, right? Maybe you went for an evening jog or just got home from your child’s baseball game and everyone is ready for a tasty meal…fast!

Grab an entire filet of wild Atlantic salmon, cut into reasonable portions (3 or 4 ounces each), and very very lightly sprinkle a pinch of sea salt over the entire fish. Crack black pepper generously over the fish to your liking.

Heat up a large cast iron skillet over medium high heat and add a tad of butter and a drizzle of olive oil.

Preheat oven to broil. Place each piece of fish in the cast iron, skin side down. Allow to cook for about 5 minutes or so. Squeeze half a lemon over the salmon and add more pepper if desired. Sprinkle in some sliced red onion around fish.

Broil for 5-8 minutes or until salmon is opaque. Watch it closely! Remove from oven and sprinkle a small amount of pink Himalayan salt on top to finish.
