Summer is a busy time of year with vacations, camps, get togethers, and hopefully some lazy evenings too. It’s not always convenient to get in the kitchen and cook for an hour or so when you are ready to relax at the end of the day!
So, grab some spaghetti, pesto, and baby heirloom tomatoes and let’s make dinner!
Boil your pasta in salted water. Slice your tomatoes in half lengthwise. Drain pasta. Return to pan and toss with olive oil. Add some fresh cracked pepper and pesto. Toss well. Add in tomatoes and serve!!!
Garnish with hard grated cheeses or fresh basil.
