So, you saw the BLT on my Facebook page and you probably wanted to know what all was piled on that ginormous sandwich, right? Well, I’m here to share my Build-your-own-BLT Bar that I put together for all the mothers in my family on Mother’s Day.
Now, I promised my husband I wouldn’t do anything too complicated and would try to keep it simple. Lord knows I can destroy a kitchen! So, I thought to myself…BLTs! Of course I can’t just do plain old BLTs. You gotta have options.
Here is a rundown of what’s on the table starting at 6 o’clock and moving clockwise:
Bread, fruit, couscous, deviled eggs, avocado, tomatoes, greens, pickles, bacon, roasted red peppers/mozzarella, goat cheese/cheddar, 4 kinds of mayo
For the bread I made some homemade sourdough..my grandma’s recipe and starter…and some delish sunflower bread from the bakery up the road.
I used 3 types of bacon from the butcher: market style, pepper, and applewood smoked bacon. They were all wonderful!
For the lettuce I chose kale, boston bibb, watercress, and broccoli sprouts. This is no time to scrimp on nutrients! Choose yummy greens that pack some nutritional value!
This is my favorite part! I told you tomato-haters that I will convert you and I will! Heirloom tomatoes are one of my favorite things about this time of year. I love the colors, I love the different shapes of the seed pockets when you slice them, and i love the many flavors! Yummmmmy. My 2 little pups even like to sample the different varieties while I’m slicing them up!
I even slow roasted some regular old grape and cherry tomatoes.
I made some homemade pesto (top left), then mixed some up with some mayo (bottom middle), chopped up some roasted red peppers (middle top), and threw in some fresh cracked pepper (right). Four different spreads…very easy.
So…let’s build this baby! I couldn’t decide which spread to use so I used all four!
I placed a piece of roasted red pepper on one side and some goat cheese and 3 year aged white cheddar on the other.
That cheddar is so good! And goat cheese makes everything better!
Next, I added some broccoli sprouts for some crunch on one side…
…and some watercress on top as well as all 3 types of bacon on the other side.
And I piled on some boston bibb and kale.
I placed a slice of each heirloom variety and some slow roasted tomatoes on top of the bacon.
Next, some avocado slices and fresh ground black pepper.
Look at that beast!
Sink your teeth into that!
Grab a few herbed deviled eggs….
…a nice scoop of couscous…
…and some fresh mango and strawberries with mint!
Now that’s a meal!
